Ingredients

  • 1 lb cooked shrimp, peeled and deveined
  • 1 avocado, diced
  • 1 small red onion, thinly sliced
  • 1 tomato, diced
  • 2 tablespoons lime juice
  • Salt to taste
  • 2 tablespoons chopped cilantro (for garnish)
  • For the cilantro mayonnaise:
  • 2 egg yolks
  • 2 garlic cloves
  • 1 tablespoon lime juice
  • 1/2 teaspoon mustard
  • 1/2 teaspoon salt
  • 1/4 cup chopped cilantro
  • 1 cup oil (vegetable or light olive oil)

Instructions

  1. In a blender or food processor, combine the egg yolks, garlic, lime juice, mustard, salt, and chopped cilantro.
  2. Blend until smooth, then slowly add the oil while blending to form a thick mayonnaise.
  3. In a large bowl, mix the cooked shrimp with the diced avocado, red onion, and tomato.
  4. Add the lime juice and salt to taste, then mix in the cilantro mayonnaise to coat the ingredients.
  5. Garnish with chopped cilantro and serve immediately or chilled.
