Description

A quick and flavorful shrimp scampi recipe made in just 16 minutes. Perfect for busy weeknights, this dish combines juicy shrimp, garlic, lemon, and butter, served over pasta for a satisfying meal.


Ingredients

  • 1 pound Linguine
  • 4 tablespoons (1/2 stick) Butter
  • 4 tablespoons Olive Oil
  • 1 pound Large Shrimp, peeled and deveined
  • 4 cloves Garlic, minced
  • 1/2 teaspoon Crushed Red Pepper Flakes
  • 1 Lemon, zested and juiced
  • 1/2 cup Dry White Wine (or Chicken Broth)
  • Salt and Freshly Ground Black Pepper, to taste
  • 2 tablespoons Fresh Parsley, chopped

Instructions

  1. Cook the linguine in a large pot of salted boiling water according to package directions. Drain and set aside.
  2. In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat.
  3. Add the shrimp to the skillet in a single layer and cook for 1-2 minutes per side, until pink and opaque. Remove shrimp and set aside.
  4. Add the remaining butter and olive oil to the skillet. Stir in garlic and red pepper flakes and sauté for about 30 seconds until fragrant.
  5. Pour in the wine (or chicken broth) and lemon juice. Bring to a simmer and let it cook for 2-3 minutes.
  6. Return the shrimp to the skillet and toss to coat in the sauce. Season with salt and pepper to taste.
  7. Add the cooked linguine and lemon zest. Toss everything together until well combined and heated through.
  8. Sprinkle with fresh parsley before serving.

  • You can substitute chicken broth for wine for a non-alcoholic version.
