Ingredients
- 5–6 small pickling cucumbers (or 2–3 English cucumbers)
- ½ medium Vidalia or other sweet onion
- ½ cup white vinegar
- ½ cup water
- 2 teaspoons sugar
- 1 teaspoon salt
- 1 clove garlic, minced
- Black pepper to taste
Instructions
- Peel and slice the cucumbers to your preferred thickness. Peel and slice the onion. Combine both in a large bowl.
- In a separate bowl, mix together the vinegar, water, sugar, salt, and garlic. Stir until the sugar and salt are dissolved.
- Pour the vinegar mixture over the cucumbers and onions, tossing to coat evenly.
- Let the salad sit for at least 1 hour in the refrigerator before serving to allow the flavors to meld.
- Just before serving, sprinkle with black pepper, if desired.
