Description

Ingredients

  • 56 small pickling cucumbers (or 23 English cucumbers)
  • ½ medium Vidalia or other sweet onion
  • ½ cup white vinegar
  • ½ cup water
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1 clove garlic, minced
  • Black pepper to taste

Instructions

  1. Peel and slice the cucumbers to your preferred thickness. Peel and slice the onion. Combine both in a large bowl.
  2. In a separate bowl, mix together the vinegar, water, sugar, salt, and garlic. Stir until the sugar and salt are dissolved.
  3. Pour the vinegar mixture over the cucumbers and onions, tossing to coat evenly.
  4. Let the salad sit for at least 1 hour in the refrigerator before serving to allow the flavors to meld.
  5. Just before serving, sprinkle with black pepper, if desired.
