Description

Simple Ground Turkey Enchiladas are a flavorful and easy weeknight dinner made with seasoned ground turkey, enchilada sauce, tortillas, and melted cheese, baked until bubbly and golden.


Ingredients

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (10 oz) can red enchilada sauce
  • 1 (4 oz) can diced green chilies (optional)
  • 8 medium flour tortillas
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 3–4 minutes.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Add ground turkey to the skillet and cook until browned, breaking it apart as it cooks.
  5. Stir in chili powder, cumin, paprika, salt, and black pepper. Mix well.
  6. Add half of the enchilada sauce and diced green chilies (if using). Simmer for 3–4 minutes.
  7. Spoon the turkey mixture evenly into each tortilla, sprinkle with a little cheese, then roll tightly.
  8. Place rolled tortillas seam-side down in the prepared baking dish.
  9. Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
  10. Bake for 20–25 minutes, until cheese is melted and bubbly.
  11. Garnish with chopped cilantro if desired and serve warm.

Notes

  • You can substitute corn tortillas for a gluten-free option.
  • Add black beans or corn for extra texture and flavor.
  • Use ground chicken instead of turkey if preferred.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
