Description

This Simple Lemon Herb Chicken is a quick and flavorful dish made with chicken breasts marinated in lemon juice, olive oil, garlic, and herbs. Perfect for a light, healthy meal.

Ingredients

  • ¼ cup fresh lemon juice
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ⅛ teaspoon ground black pepper
  • 4 boneless, skinless chicken breast halves

Instructions

  1. In a large resealable plastic bag or shallow glass dish, combine lemon juice, olive oil, garlic, oregano, salt, and pepper.
  2. Add chicken breasts to the marinade and turn to coat. Cover and refrigerate for at least 30 minutes, up to 8 hours.
  3. Preheat grill or broiler to medium-high heat.
  4. Remove chicken from marinade and discard marinade.
  5. Grill or broil chicken for 6 to 8 minutes on each side, or until juices run clear and chicken is no longer pink in the center.

Notes

  • Marinating the chicken longer enhances flavor.
  • You can bake the chicken at 375°F (190°C) for 25-30 minutes if preferred.
  • Pairs well with a fresh salad or steamed vegetables.
