Description
These simply delicious marinated olives are infused with garlic, orange peel, herbs, and chilli for a bright and flavorful appetizer. Perfect for entertaining or serving alongside bread and cheese.
Ingredients
- 14oz / 400g olives, pitted
- 1/3 cup / 80ml extra virgin olive oil
- 1/4 cup / 20g very finely diced fresh parsley
- 4 fat cloves garlic, peeled and cut into 3 slices each
- 1 orange, peeled into 3/4 inch strips with vegetable peeler
- 1 tbsp red wine vinegar
- 1 tsp dried oregano
- 1 tsp chilli flakes
Instructions
- In a large shallow dish, whisk together extra virgin olive oil, red wine vinegar, parsley, oregano, and chilli flakes.
- Add the olives, orange peel, and garlic. Toss well to fully coat.
- Cover and marinate for at least 1 hour, tossing occasionally. If marinating longer than 1 hour, refrigerate and bring to room temperature before serving.
Notes
- Adjust chilli flakes to your preferred spice level.
- If using unpitted olives, allow extra time for guests to remove pits.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- Serve with crusty bread, antipasto platters, or as part of a mezze spread.
