Ingredients
- 1/4 cup olive oil
- 1 onion, thinly sliced
- 4 cloves garlic, roughly chopped
- 2 15-ounce cans chickpeas, drained and rinsed
- 1 24-ounce jar marinara sauce
- 1/4 cup water
- Kosher salt and freshly cracked black pepper to taste
- 1–2 cups shredded mozzarella
- Fresh basil for garnish
- Bread for serving
Instructions
- Heat the olive oil over medium-high heat in a large skillet.
- Add the sliced onion and sauté for 3–5 minutes until softened.
- Add the chopped garlic and cook for 30 seconds until fragrant.
- Stir in the chickpeas, marinara sauce, and water. Season with kosher salt and freshly cracked black pepper to taste.
