Ingredients
- 2 medium sweet potatoes, peeled and cubed
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 red onion, chopped
- 1 red bell pepper, chopped
- 2 cups chopped kale
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 eggs (optional, for topping)
- Fresh herbs (optional, for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the sweet potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften.
- Add garlic, red onion, and red bell pepper to the skillet and cook for another 5 minutes.
- Stir in chopped kale, paprika, salt, and pepper. Cook until kale is wilted and sweet potatoes are tender, about 5 more minutes.
- If adding eggs, make small wells in the hash and crack eggs into them. Cover the skillet and cook until eggs are set to your liking, about 5-7 minutes.
- Top with fresh herbs if desired and serve warm.
