Description

Slow Cooker Beef Bourguignon is a rich, comforting French stew featuring tender beef, bacon, vegetables, and a deep red wine sauce. This hands-off recipe brings gourmet flavor with minimal effort, perfect for both weeknights and special occasions.


Ingredients

  • 2 lbs stew beef (such as chuck), cut into cubes
  • 6 oz bacon, chopped
  • 3 carrots, sliced
  • 1 large yellow onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 2 cups red wine (preferably Burgundy or Pinot Noir)
  • 2 cups beef broth
  • 34 sprigs fresh thyme
  • 2 bay leaves
  • 8 oz mushrooms, halved or sliced
  • Salt and black pepper, to taste
  • 1 tbsp olive oil
  • 1 tbsp cornstarch (optional, for thickening)
  • 2 tbsp cold water (for cornstarch slurry, optional)

Instructions

  1. In a skillet over medium heat, cook the chopped bacon until crispy. Remove and set aside.
  2. In the same skillet, sear the beef in batches until browned on all sides. Transfer to the slow cooker.
  3. Add carrots, onion, and garlic to the skillet. Cook for a few minutes until slightly softened, then transfer to the slow cooker.
  4. Stir in the tomato paste, red wine, beef broth, thyme, bay leaves, and cooked bacon.
  5. Cover and cook on low for 8–10 hours or on high for 5–6 hours, until the beef is tender.
  6. In the last hour of cooking, stir in the mushrooms.
  7. If a thicker sauce is desired, mix cornstarch with a bit of cold water and stir it into the stew. Let it cook for 15–20 more minutes.
  8. Remove bay leaves before serving. Taste and adjust seasoning with salt and pepper as needed.

Notes

  • For a non-alcoholic version, replace wine with more broth and a splash of balsamic vinegar or grape juice.
  • Use gluten-free beef broth to make the dish gluten-free.
  • Add celery, parsnips, or potatoes for a heartier meal.
  • Omit bacon or use turkey bacon for a pork-free variation.
  • Rosemary or parsley can be added for extra herb flavor.
