Description
This Slow Cooker Corned Beef and Cabbage is an easy and hearty meal made with tender corned beef brisket, baby potatoes, carrots, and cabbage, all simmered to perfection in a flavorful broth.
Ingredients
- 3–4 lb corned beef brisket (with seasoning packet)
- 1 large onion, cut into wedges
- 3 cloves garlic, peeled and smashed
- 4 cups low sodium beef broth
- 1 lb baby potatoes, halved
- 4 large carrots, peeled and cut into large chunks
- 1 small head green cabbage, cut into wedges
Instructions
- Place the onion wedges and garlic in the bottom of the slow cooker.
- Rinse the corned beef brisket and place it on top of the onions, fat side up. Sprinkle the seasoning packet over the top.
- Pour the beef broth around the brisket, then cover and cook on LOW for 8-9 hours or HIGH for 5-6 hours.
- Add the potatoes and carrots to the slow cooker during the last 2-3 hours of cooking time.
- Add the cabbage wedges during the last hour of cooking time.
- Once everything is tender, remove from the slow cooker, slice the corned beef against the grain, and serve with the vegetables.
Notes
- If you prefer your cabbage more firm, add it only during the last 30 minutes of cooking.
- Leftovers make great sandwiches or hash the next day.
- Use low sodium broth to better control the salt content.
