Description

This Slow Cooker Creamy Tomato Basil Chicken is a rich and flavorful dish made with tender chicken breasts simmered in a creamy tomato and basil sauce. It’s perfect served over pasta, rice, or with crusty bread for a comforting meal.


Ingredients

  • 4 boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/8 teaspoon red pepper flakes (optional)
  • 1 can (14 oz) diced tomatoes
  • 1/4 cup tomato paste
  • 1/2 cup low sodium chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon minced garlic
  • 1/2 cup fresh chopped basil

Instructions

  1. Place chicken breasts in a 4-6 quart slow cooker.
  2. In a small bowl, combine salt, pepper, basil, garlic powder, onion powder, paprika, and red pepper flakes. Sprinkle evenly over the chicken.
  3. Add diced tomatoes, tomato paste, chicken broth, and minced garlic to the slow cooker. Stir gently to combine without disturbing the chicken too much.
  4. Cover and cook on low for 4-6 hours or high for 2-3 hours, until the chicken is cooked through and tender.
  5. Stir in the heavy cream and Parmesan cheese. Cover and cook for an additional 10-15 minutes until the sauce is heated through and slightly thickened.
  6. Stir in the fresh basil just before serving.
  7. Serve over pasta, rice, or with crusty bread.

  • Use fresh basil at the end for best flavor.
  • You can shred the chicken if desired for a different texture.
  • Heavy cream can be substituted with half-and-half, though the sauce will be slightly less rich.
