This Smashburger Quesadilla is a delicious fusion of a juicy smash-style cheeseburger and a crispy quesadilla. It’s packed with flavor, easy to make, and perfect for a satisfying meal.
Ingredients
- 1/2 lb ground beef (80/20 preferred)
- 2 large flour tortillas
- 1/4 cup diced onions
- 1/2 cup shredded cheddar cheese
- 1 tbsp mayonnaise
- 1 tbsp ketchup
- 1 tsp yellow mustard
- 1 dill pickle, chopped (optional)
- Salt and pepper to taste
- 1 tbsp butter or oil for cooking
Instructions
- Preheat a skillet or griddle over medium-high heat.
- Divide the ground beef into two equal balls.
- Place each beef ball on the skillet and smash it flat using a spatula. Season with salt and pepper.
- Cook the patties for about 2-3 minutes per side or until crispy and cooked through.
- Remove the patties and set aside.
- In the same skillet, reduce heat to medium and add a bit of butter or oil.
- Place one tortilla in the skillet, sprinkle half the cheese evenly on one half, add the cooked beef patty, onions, sauce (mayonnaise, ketchup, mustard), and optional pickles.
- Top with more cheese and fold the tortilla over to form a half-moon shape.
- Cook for 2-3 minutes per side or until golden and crispy and cheese is melted.
- Repeat for the second quesadilla.
- Slice and serve warm.

- Use 80/20 ground beef for the best flavor and texture.
- Customize with your favorite burger toppings like jalapeños, tomatoes, or bacon.
- For extra crispiness, press the quesadilla slightly while cooking.
