Ingredients
- 2 large sweet potatoes, peeled and cut into 1/2-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Place the cubed sweet potatoes in a large bowl. Drizzle with olive oil and toss to coat.
- In a small bowl, mix together smoked paprika, garlic powder, salt, and pepper.
- Sprinkle the seasoning mixture over the sweet potatoes and toss until evenly coated.
- Spread the sweet potatoes out in a single layer on the prepared baking sheet.
- Roast for 30–40 minutes, stirring halfway through, until sweet potatoes are tender and slightly crispy on the edges.
- Remove from oven and serve warm.
Notes
- Try to cut the sweet potatoes into uniform pieces for even roasting.
- You can add other spices like cumin or chili powder for extra flavor.
