Description

This Smoked Sausage and Rice Skillet is a quick and hearty one-pan meal packed with smoky sausage, tender rice, bell peppers, onions, and flavorful seasonings. Perfect for busy weeknights.


Ingredients

  • 1 tablespoon olive oil
  • 1 (14-ounce) smoked sausage, sliced
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1 (14.5-ounce) can diced tomatoes, drained
  • 1 cup shredded cheddar cheese (optional)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the sliced smoked sausage and cook until browned, about 5 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add diced onion and bell peppers. Cook until softened, about 3-4 minutes.
  4. Add minced garlic and cook for another 30 seconds.
  5. Stir in paprika, salt, black pepper, and cayenne pepper if using.
  6. Add the rice and stir to coat it with the seasonings and vegetables.
  7. Pour in chicken broth and diced tomatoes. Stir well and bring to a boil.
  8. Reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and the liquid is absorbed.
  9. Return the sausage to the skillet and stir to combine. Cook for an additional 2-3 minutes to heat through.
  10. Sprinkle with shredded cheese if desired and cover until melted.
  11. Garnish with sliced green onions before serving.

  • Use turkey or chicken sausage for a lighter option.
  • Add a dash of hot sauce for extra heat.
  • Substitute brown rice, but increase cook time accordingly.
