Description

Smoky Instant Pot BBQ Pulled Chicken is a quick, flavorful dish made with boneless chicken breasts, BBQ sauce, and simple spices. Perfect for busy weeknights or weekend gatherings, it’s tender, juicy, and packed with smoky flavor.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup BBQ sauce (plus more for serving)
  • 1/2 cup chicken broth
  • 1 tbsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Set the Instant Pot to Sauté mode and add olive oil.
  2. Season chicken breasts with smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Place chicken in the Instant Pot and sear for 2-3 minutes per side.
  4. Pour in chicken broth and 1 cup of BBQ sauce.
  5. Seal the lid and cook on high pressure for 15 minutes.
  6. Allow natural pressure release for 10 minutes, then quick release the rest.
  7. Remove chicken and shred using two forks.
  8. Return shredded chicken to the pot and stir to coat with sauce.
  9. Serve with extra BBQ sauce on buns, over rice, or with your favorite sides.
