Description

A smooth and creamy butternut squash soup made with sweet apples, aromatic spices, and rich coconut milk. This vegan and gluten-free soup is comforting, nourishing, and perfect for fall or winter meals.


Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, peeled and grated
  • 1 large butternut squash (about 3 lbs), peeled, seeded, and cubed
  • 2 apples (like Gala or Honeycrisp), peeled, cored, and chopped
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon chili flakes (optional)
  • 4 cups vegetable broth
  • 1 can (13.5 oz) full-fat coconut milk
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in garlic and ginger, cooking for another minute until fragrant.
  4. Add cubed butternut squash and chopped apples, and sauté for 5 minutes.
  5. Season with cinnamon, nutmeg, turmeric, chili flakes (if using), salt, and pepper. Stir well to coat the vegetables.
  6. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20–25 minutes, or until the squash and apples are tender.
  7. Remove from heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer in batches to a blender and blend carefully.
  8. Stir in coconut milk and return to low heat. Warm through but do not boil.
  9. Taste and adjust seasoning as needed. Serve hot, garnished with fresh herbs if desired.

Notes

  • Use a sweet apple variety like Gala or Fuji for best flavor.
  • Soup can be made ahead and stored in the refrigerator for up to 5 days.
  • Freezes well for up to 3 months.
  • Add more chili flakes if you prefer a spicier soup.
