Ingredients
4 bone-in, skinless chicken thighs
2 tablespoons olive oil
1 medium onion, diced
3 cloves garlic, minced
2 cups chicken broth
1 cup heavy cream
1 teaspoon smoked paprika
1 teaspoon thyme
1 teaspoon garlic powder
Salt and pepper, to taste
2 cups long-grain white rice
4 cups water
1 tablespoon butter

Season the Chicken: Season the chicken thighs generously with salt, pepper, smoked paprika, thyme, and garlic powder.

Sear the Chicken: Heat olive oil in a large skillet or Dutch oven over medium heat. Add the chicken thighs and sear for about 4-5 minutes per side until golden brown. Remove the chicken and set aside.

Prepare the Gravy: In the same skillet, add the diced onion and cook until softened, about 3-4 minutes. Add the garlic and cook for another minute. Pour in the chicken broth and heavy cream, scraping up any browned bits from the bottom of the pan.
