Description
Tender chicken breasts smothered in a rich and creamy spinach and mushroom sauce, topped with crispy bacon and Parmesan for a savory and comforting meal.
Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 slices bacon, chopped
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon nutmeg
- Additional Parmesan cheese and fresh parsley for garnish
Instructions
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, cook the chopped bacon until crisp. Remove and set aside, leaving the bacon grease in the skillet.
- Add sliced mushrooms to the skillet and sauté for about 5 minutes until they begin to brown.
- Add minced garlic and cook for another minute.
- Stir in fresh spinach and cook until wilted.
- Lower the heat and stir in heavy cream, grated Parmesan cheese, and nutmeg. Cook, stirring frequently, until the sauce thickens slightly.
- Return the cooked chicken and bacon to the skillet. Spoon the sauce over the chicken and cook for an additional 2-3 minutes until heated through.
- Serve hot, garnished with additional Parmesan cheese and fresh parsley.
Notes
- For extra flavor, deglaze the skillet with a splash of white wine before adding the cream.
- Use baby spinach for a more tender texture.
- Serve with mashed cauliflower or roasted veggies for a low-carb meal.
