Description

Tender chicken breasts smothered in a rich and creamy spinach and mushroom sauce, topped with crispy bacon and Parmesan for a savory and comforting meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 slices bacon, chopped
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon nutmeg
  • Additional Parmesan cheese and fresh parsley for garnish

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, cook the chopped bacon until crisp. Remove and set aside, leaving the bacon grease in the skillet.
  4. Add sliced mushrooms to the skillet and sauté for about 5 minutes until they begin to brown.
  5. Add minced garlic and cook for another minute.
  6. Stir in fresh spinach and cook until wilted.
  7. Lower the heat and stir in heavy cream, grated Parmesan cheese, and nutmeg. Cook, stirring frequently, until the sauce thickens slightly.
  8. Return the cooked chicken and bacon to the skillet. Spoon the sauce over the chicken and cook for an additional 2-3 minutes until heated through.
  9. Serve hot, garnished with additional Parmesan cheese and fresh parsley.

Notes

  • For extra flavor, deglaze the skillet with a splash of white wine before adding the cream.
  • Use baby spinach for a more tender texture.
  • Serve with mashed cauliflower or roasted veggies for a low-carb meal.
