Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 tablespoon garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season the chicken breasts with salt, pepper, thyme, and paprika.
- Add the chicken to the skillet and cook for 6-7 minutes on each side until golden brown and fully cooked. Remove from the skillet and set aside.
- In the same skillet, add the garlic and cook for 30 seconds until fragrant.
- Pour in the chicken broth, scraping the bottom of the skillet to release any browned bits.
- Stir in the heavy cream and Dijon mustard, bringing the sauce to a simmer. Let it cook for 3-4 minutes until it thickens slightly.
- Return the chicken to the skillet, spooning some sauce over the top. Let it simmer for an additional 5 minutes, allowing the chicken to soak up the sauce.
- Garnish with fresh parsley before serving.

- Use a meat thermometer to ensure chicken reaches 165°F internally.
- Can substitute half-and-half for heavy cream for a lighter sauce.
- Serve with mashed potatoes, rice, or steamed vegetables.
