Description

These no-bake Snickers Balls are a rich and satisfying treat made with dates, peanuts, and chocolate. They are naturally sweet, chewy, and perfect for a quick dessert or snack.


Ingredients

  • 1 cup Medjool Dates (about 1214 pitted medjool dates)
  • 1/2 cup Rolled Oats
  • 1/4 cup Peanut Butter
  • 1/3 cup Roasted Salted Peanuts
  • 1 teaspoon Vanilla Extract
  • 3/4 cup Dark Chocolate Chips
  • 1 pinch Salt
  • 2 teaspoons Olive Oil

Instructions

  1. Line a plate with lightly oiled parchment paper and set aside.
  2. Place the Medjool dates in a bowl and cover with boiled water. Let sit for 5 minutes.
  3. Drain the dates and gently press to remove excess water. Transfer to a food processor.
  4. Add oats, peanut butter, vanilla extract, and roasted peanuts.
  5. Blend until a sticky dough forms, scraping down the sides as needed.
  6. Lightly oil your hands with olive oil to prevent sticking.
  7. Scoop about 1 1/2 tablespoons of dough and roll into balls. Place on the prepared plate.
  8. Form approximately 11 balls and refrigerate while preparing the chocolate.
  9. In a microwave-safe bowl, melt chocolate chips with olive oil in 30-second intervals, stirring until smooth.
  10. Dip each ball into the melted chocolate, let excess drip off, and return to the lined plate.

Notes

  • Use soft Medjool dates for best texture; soak longer if they are dry.
  • Store in the refrigerator for up to 1 week or freeze for longer storage.
  • You can substitute almond butter for peanut butter if desired.
