Ingredients
- 2 cups 2 tablespoons (265g) all-purpose flour, spooned & leveled
- 1 teaspoon cornstarch
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¾ cup (170g) unsalted butter, softened to room temperature
- ¾ cup (150g) packed light or dark brown sugar
- ½ cup (100g) granulated sugar
- 1 large egg
- 1 egg yolk, at room temperature
- 1 and ½ teaspoons pure vanilla extract
- 1 cup mini M&Ms (plus 2 tablespoons for topping, optional)
Instructions
- Whisk together the flour, cornstarch, baking soda, and salt in a medium bowl. Set aside.
- In a large bowl, using a hand-held mixer or stand mixer with a paddle attachment, beat the softened butter for about 1 minute on medium speed until creamy. Add the brown sugar and granulated sugar, and beat on medium-high speed until combined and creamy. Scrape down the sides and bottom of the bowl as needed.
- Add the egg, egg yolk, and vanilla extract, beating until combined. Scrape down the bowl as necessary.
- With the mixer running on low speed, slowly add the dry ingredients to the wet ingredients. Once combined, stir in 1 cup of M&Ms and mix on low for 20 seconds.
- Cover the cookie dough tightly and chill in the refrigerator for 2 hours, or up to 5 days.
- Preheat the oven to 350°F (177°C). Line baking sheets with parchment paper or silicone mats.
- Roll the chilled dough into balls, about 1.5 tablespoons per cookie, and place them 3 inches apart on the prepared baking sheets.
- Bake for 11-12 minutes, or until the edges are lightly browned, but the centers are still soft.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes. While still warm, press the remaining 2 tablespoons of M&Ms into the tops of the cookies (optional). Transfer to a wire rack to cool completely.
Notes
- Chilling the dough is crucial for thick, chewy cookies, so don’t skip that step!
- The cookies will continue to set as they cool on the baking sheet, so be careful not to overbake.
