Description

These Christmas Ginger Sandwich Cookies are soft and chewy ginger molasses cookies filled with a creamy vanilla buttercream, making them the perfect holiday treat.


Ingredients

  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1/4 cup molasses
  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/4 cup granulated sugar, for rolling
  • 1/2 cup unsalted butter, softened (for filling)
  • 1 1/2 cups powdered sugar (for filling)
  • 1 tsp vanilla extract (for filling)
  • 1 tbsp milk (for filling, more as needed)

Instructions

  1. Preheat the oven to 350ºF. Line baking sheets with parchment paper or silicone liners.
  2. In a large bowl, beat 3/4 cup butter and 1 cup sugar until light and fluffy. Add the egg and molasses and beat to combine.
  3. In another bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and cloves. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  4. Roll dough into 1-inch balls and roll in 1/4 cup sugar. Place on prepared baking sheets.
  5. Bake for 8–10 minutes, until the edges are set. Let cool on the pan for a few minutes, then transfer to a wire rack to cool completely.
  6. To make the filling, beat 1/2 cup butter until fluffy. Add powdered sugar, vanilla, and milk. Beat until smooth and creamy. Add more milk if needed for desired consistency.
  7. Spread or pipe filling onto the bottom of one cookie and top with another to make a sandwich. Repeat with remaining cookies.

Notes

  • Make sure the cookies are fully cooled before adding the filling to prevent it from melting.
  • Cookies can be stored in an airtight container for several days.
  • Chilling the dough before baking can help prevent spreading.
