1 cup (240g) sourdough starter, active and bubbly
1 cup (240ml) warm water
1 tablespoon honey or sugar
3 ½ cups (420g) all-purpose flour
2 teaspoons salt
2 tablespoons olive oil or unsalted butter
1 teaspoon instant yeast (optional, for extra rise)

In a large mixing bowl, combine the warm water, honey (or sugar), and sourdough starter. Stir until the honey dissolves and the mixture is smooth.

Gradually add the flour, salt, and instant yeast (if using). Stir with a wooden spoon or dough hook until the mixture forms a dough.

Add the olive oil (or butter) and knead for 8-10 minutes until the dough is smooth and elastic.
