Description

Soft, fluffy, and flavorful sourdough cinnamon rolls made with a naturally leavened dough, filled with a cinnamon-sugar mixture and topped with a luscious cream cheese frosting. Perfect for breakfast or brunch!


Ingredients

  • 1 cup (240g) active sourdough starter
  • 3/4 cup (180ml) warm milk
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 1/2 cup (113g) unsalted butter, melted
  • 4 cups (500g) all-purpose flour
  • 1 tsp salt
  • 1/2 cup (113g) unsalted butter, softened (for filling)
  • 3/4 cup (150g) brown sugar (for filling)
  • 2 tbsp ground cinnamon (for filling)
  • 4 oz (113g) cream cheese, softened (for frosting)
  • 1/4 cup (57g) unsalted butter, softened (for frosting)
  • 1 cup (120g) powdered sugar (for frosting)
  • 1/2 tsp vanilla extract (for frosting)
  • 12 tbsp milk (to thin frosting, as needed)

Instructions

  1. In a large mixing bowl, combine the sourdough starter, warm milk, sugar, eggs, and melted butter. Mix until well combined.
  2. Add the flour and salt, and mix until a shaggy dough forms.
  3. Knead the dough for 8–10 minutes until smooth and elastic. Cover and let it rest at room temperature for 30 minutes, then refrigerate overnight (8–12 hours).
  4. The next morning, roll the dough into a rectangle about 12×18 inches on a floured surface.
  5. Spread the softened butter over the dough, then sprinkle with brown sugar and cinnamon evenly.
  6. Roll the dough up tightly from the long side into a log and slice into 12 even pieces.
  7. Place rolls into a greased 9×13 inch baking dish. Cover and let rise in a warm place for 1–2 hours, or until puffy.
  8. Preheat oven to 375°F (190°C). Bake the rolls for 22–25 minutes, or until golden brown.
  9. While the rolls bake, prepare the frosting by mixing cream cheese, butter, powdered sugar, vanilla, and a little milk until smooth.
  10. Spread the frosting over warm rolls before serving.
