Ingredients
- 2 slices of sourdough bread
- 1–2 tbsp pesto (store-bought or homemade)
- 2 slices of mozzarella cheese
- 2 slices of cheddar cheese
- 1 tbsp butter (for grilling)
Instructions
- Preheat a skillet or griddle over medium heat.
- Spread pesto on one side of each slice of bread.
- Layer mozzarella and cheddar cheese between the slices, pesto sides facing inward.
- Butter the outer sides of the sandwich.
- Place the sandwich on the hot skillet and cook until golden brown, about 3-4 minutes per side, pressing gently to ensure even toasting and melting.
- Once both sides are golden and the cheese is melted, remove from heat and let sit for 1 minute.
- Slice and serve warm.
