Description

Spanish Churro Pancakes combine the fluffy texture of pancakes with the cinnamon-sugar flavor of classic churros. A delicious breakfast treat with a crispy sugar-coated finish.


Ingredients

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tbsp melted butter (plus more for greasing pan)
  • 1/2 cup sugar (for coating)
  • 1 tbsp ground cinnamon (for coating)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine the buttermilk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a nonstick skillet or griddle over medium heat and lightly grease with butter.
  5. Pour 1/4 cup of batter onto the skillet for each pancake and cook until bubbles form on the surface, then flip and cook until golden brown.
  6. In a shallow dish, mix the sugar and cinnamon for coating.
  7. While pancakes are still warm, brush lightly with melted butter and dip each side into the cinnamon-sugar mixture.
  8. Serve warm and enjoy!

Notes

  • For extra crispiness, lightly toast the pancakes after coating in sugar.
  • Serve with chocolate sauce or dulce de leche for a richer experience.
