Description
This easy Rice and Ground Beef Skillet is a hearty, one-pan meal loaded with seasoned beef, fluffy rice, vegetables, and savory spices—perfect for busy weeknights or meal prep.
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup uncooked long-grain white rice
- 2 cups beef broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup frozen peas and carrots
- 1 tsp paprika
- 1/2 tsp dried oregano
- Salt and pepper, to taste
- 2 tbsp olive oil
- Fresh parsley, chopped (for garnish, optional)
Instructions
- In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent, about 3–4 minutes.
- Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Add minced garlic and stir for 1 minute until fragrant.
- Stir in uncooked rice, beef broth, diced tomatoes, peas and carrots, paprika, oregano, salt, and pepper.
- Bring to a boil, then reduce heat to low and cover the skillet.
- Simmer for 18–20 minutes, or until the rice is tender and liquid is absorbed.
- Remove from heat and let sit covered for 5 minutes before fluffing with a fork.
- Garnish with chopped parsley and serve warm.
Notes
- Use lean ground beef to reduce grease.
- Can be made ahead and reheated—great for meal prep.
- Swap in ground turkey or chicken for a lighter option.
- Add shredded cheese on top for an extra layer of flavor.
