Description
These spicy peanut butter noodles are a quick, flavorful, and satisfying dish made with a creamy, spicy peanut sauce tossed with noodles and fresh veggies. Perfect for a weeknight dinner or meal prep.
Ingredients
- 8 oz rice noodles or spaghetti
- 1/3 cup creamy peanut butter
- 2 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp maple syrup
- 1–2 tsp sriracha or chili garlic sauce (to taste)
- 1 clove garlic, minced
- 1/2 tsp grated fresh ginger
- 1/4 cup hot water (to thin sauce)
- 1 cup shredded carrots
- 1 cup shredded red cabbage
- 2 green onions, chopped
- Fresh cilantro (for garnish)
- Crushed peanuts (for garnish)
Instructions
- Cook noodles according to package instructions, then drain and rinse with cold water.
- In a mixing bowl, whisk together peanut butter, soy sauce, sesame oil, rice vinegar, maple syrup, sriracha, garlic, ginger, and hot water until smooth.
- In a large bowl, combine cooked noodles, carrots, cabbage, and green onions.
- Pour the peanut sauce over the noodle mixture and toss until well combined.
- Top with fresh cilantro and crushed peanuts before serving.
Notes
- Adjust spice level by adding more or less sriracha.
- Use gluten-free tamari for a gluten-free version.
- Great served warm or cold.
- Add tofu or chicken for extra protein.
