Description

This Squid Pasta, made with penne and tender calamari, is a flavorful and comforting seafood dish inspired by Mediterranean cuisine. It features a rich tomato-based sauce infused with garlic, white wine, and herbs, making it an elegant yet simple meal perfect for any night of the week.


Ingredients

  • 400g penne pasta
  • 500g calamari (cleaned and sliced into rings)
  • 3 garlic cloves, minced
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil
  • 1/2 cup dry white wine
  • 400g canned crushed tomatoes
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3–4 minutes.
  3. Add minced garlic and cook for another 30 seconds until fragrant.
  4. Stir in the sliced calamari and cook for 2–3 minutes until just beginning to turn opaque.
  5. Pour in the white wine and let it simmer for 2–3 minutes to reduce slightly.
  6. Add the crushed tomatoes and red pepper flakes (if using). Season with salt and black pepper.
  7. Lower the heat and let the sauce simmer for about 15 minutes, stirring occasionally, until slightly thickened and the calamari is tender.
  8. Add the cooked pasta to the sauce and toss to coat evenly.
  9. Serve hot, garnished with chopped parsley and Parmesan cheese if desired.

Notes

  • Do not overcook the calamari or it may become rubbery—just simmer until tender.
  • You can use squid tentacles along with rings for extra flavor and texture.
  • Substitute white wine with seafood or vegetable broth if preferred.
  • This dish pairs well with a crisp white wine like Pinot Grigio or Sauvignon Blanc.
