Description

These Starbucks-inspired Pumpkin Cream Cheese Muffins are soft, moist, and filled with fall flavors. Perfectly spiced and topped with a sweet cream cheese center, they’re a homemade treat that rivals the original.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 tbsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 (15 oz) can pumpkin puree
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar (for filling)
  • 1/2 tsp vanilla extract (for filling)
  • 1/4 cup chopped pepitas (pumpkin seeds)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, pumpkin pie spice, baking soda, and salt.
  3. In a large bowl, mix granulated sugar, brown sugar, eggs, pumpkin puree, vegetable oil, milk, and vanilla extract until well combined.
  4. Gradually add dry ingredients to wet ingredients and stir until just combined.
  5. Fill each muffin cup about 3/4 full with the pumpkin batter.
  6. In a small bowl, beat cream cheese, 1/4 cup sugar, and 1/2 tsp vanilla extract until smooth.
  7. Spoon about 1 tablespoon of cream cheese mixture into the center of each muffin.
  8. Sprinkle chopped pepitas around the cream cheese filling.
  9. Bake for 18–22 minutes or until a toothpick inserted in the muffin (not the center) comes out clean.
  10. Let cool in pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use room temperature cream cheese for smoother filling.
  • You can substitute pepitas with chopped nuts or omit them if preferred.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
