Description

Sticky Apple Cider Chicken with Crisp Autumn Slaw is a flavorful and cozy dish perfect for fall. Tender chicken thighs are glazed in a sweet and tangy apple cider sauce and served alongside a refreshing slaw made with apples, cabbage, and carrots.


Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 cup apple cider
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 2 garlic cloves, minced
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 large carrot, julienned
  • 1 apple, thinly sliced
  • 2 tablespoons apple cider vinegar (for slaw)
  • 1 tablespoon olive oil (for slaw)
  • 1 teaspoon honey (for slaw)
  • Salt and pepper to taste (for slaw)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken thighs with salt and pepper.
  3. Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Add chicken thighs, skin side down, and sear for 5–7 minutes until golden brown. Flip and cook for another 2–3 minutes. Remove chicken and set aside.
  4. In the same skillet, add apple cider, Dijon mustard, apple cider vinegar, honey, minced garlic, thyme, and red pepper flakes. Stir and bring to a simmer.
  5. Return the chicken to the skillet, skin side up. Transfer the skillet to the oven and bake for 20–25 minutes, or until the chicken is cooked through and sauce is sticky and reduced.
  6. While the chicken is cooking, prepare the slaw by combining green cabbage, red cabbage, carrot, and apple in a large bowl.
  7. In a small bowl, whisk together apple cider vinegar, olive oil, honey, salt, and pepper. Pour over slaw and toss to combine. Let sit for at least 10 minutes before serving.
  8. Serve sticky apple cider chicken with a generous helping of autumn slaw on the side.

Notes

  • You can substitute boneless chicken thighs but reduce cooking time slightly.
  • Make the slaw ahead of time for more developed flavor.
  • Use fresh apple cider (not apple juice) for best taste.
