Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup barbecue sauce
- 1 cup pineapple chunks (fresh or canned, drained)
- 1/2 cup pineapple juice
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Season the chicken breasts with salt and black pepper.
- In a bowl, mix together barbecue sauce, pineapple juice, soy sauce, brown sugar, and minced garlic.
- Heat olive oil in a skillet over medium-high heat and sear the chicken for 2–3 minutes per side until lightly browned.
- Transfer chicken to the prepared baking dish and pour the pineapple BBQ sauce mixture over the top.
- Scatter pineapple chunks evenly around and over the chicken.
- Bake uncovered for 30–35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Spoon sauce over the chicken before serving and garnish with chopped parsley if desired.
