Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup barbecue sauce
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1/2 cup pineapple juice
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Season the chicken breasts with salt and black pepper.
  3. In a bowl, mix together barbecue sauce, pineapple juice, soy sauce, brown sugar, and minced garlic.
  4. Heat olive oil in a skillet over medium-high heat and sear the chicken for 2–3 minutes per side until lightly browned.
  5. Transfer chicken to the prepared baking dish and pour the pineapple BBQ sauce mixture over the top.
  6. Scatter pineapple chunks evenly around and over the chicken.
