Ingredients

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar (for filling)
  • 1/2 tsp vanilla extract (for filling)
  • 1.2 oz (about 1 cup) freeze-dried strawberries
  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar (for dough)
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. In a small bowl, beat cream cheese with 1/4 cup sugar and 1/2 tsp vanilla extract until smooth. Scoop small portions onto a parchment-lined baking sheet and freeze for about 30 minutes.
  2. In a food processor, blend freeze-dried strawberries into a fine powder. Set aside.
  3. In a large bowl, cream butter with brown sugar and 1/2 cup granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in the strawberry powder, flour, baking powder, baking soda, and salt until a dough forms.
  6. Scoop out dough and flatten slightly. Place a frozen cream cheese portion in the center and wrap the dough around to seal.
  7. Place the filled cookies on a baking sheet and chill in the refrigerator for 15–20 minutes.
  8. Preheat oven to 350°F (175°C). Bake cookies for 12–15 minutes, or until edges are set and lightly golden.
  9. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
