Description
These Strawberry Cheesecake Crumbl Cookies are soft, thick, bakery-style cookies topped with creamy cheesecake frosting and a sweet strawberry glaze. A perfect dessert mash-up of cookies and cheesecake, they’re sure to impress at any gathering.
Ingredients
- 2 ¾ cups all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- 1 cup unsalted butter, softened
- 1 ¼ cups granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 8 oz cream cheese, softened
- 1 ½ cups powdered sugar
- ½ tsp vanilla extract (for frosting)
- ½ cup strawberry jam or preserves
- Fresh strawberries (optional, for garnish)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, beat the butter and granulated sugar until light and fluffy.
- Add eggs and vanilla extract to the butter mixture and beat until combined.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Scoop large portions of dough onto the prepared baking sheet and gently flatten each cookie.
- Bake for 10–12 minutes, or until the edges are set and the centers are still soft.
- Let the cookies cool completely on a wire rack.
- In a bowl, beat cream cheese until smooth, then add powdered sugar and vanilla and beat until creamy.
- Spread the cream cheese frosting over each cooled cookie.
- Warm the strawberry jam slightly and drizzle or swirl it on top of the frosting.
- Garnish with fresh strawberries if desired and chill slightly before serving.
Notes
- Do not overbake to maintain soft centers.
- Store in the fridge due to the cream cheese frosting.
- Use a piping bag for neater frosting and jam swirl.
- These cookies can be made a day ahead and assembled before serving.
- Freeze unfrosted cookies for up to 2 months.
