Description

These Strawberry Cheesecake Crumbl Cookies are soft, thick, bakery-style cookies topped with creamy cheesecake frosting and a sweet strawberry glaze. A perfect dessert mash-up of cookies and cheesecake, they’re sure to impress at any gathering.


Ingredients

  • 2 ¾ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1 ¼ cups granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1 ½ cups powdered sugar
  • ½ tsp vanilla extract (for frosting)
  • ½ cup strawberry jam or preserves
  • Fresh strawberries (optional, for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, beat the butter and granulated sugar until light and fluffy.
  4. Add eggs and vanilla extract to the butter mixture and beat until combined.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Scoop large portions of dough onto the prepared baking sheet and gently flatten each cookie.
  7. Bake for 10–12 minutes, or until the edges are set and the centers are still soft.
  8. Let the cookies cool completely on a wire rack.
  9. In a bowl, beat cream cheese until smooth, then add powdered sugar and vanilla and beat until creamy.
  10. Spread the cream cheese frosting over each cooled cookie.
  11. Warm the strawberry jam slightly and drizzle or swirl it on top of the frosting.
  12. Garnish with fresh strawberries if desired and chill slightly before serving.

Notes

  • Do not overbake to maintain soft centers.
  • Store in the fridge due to the cream cheese frosting.
  • Use a piping bag for neater frosting and jam swirl.
  • These cookies can be made a day ahead and assembled before serving.
  • Freeze unfrosted cookies for up to 2 months.
