Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups strawberry ice cream (store-bought or homemade)
  • 1/4 cup fresh strawberries, finely chopped (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a separate bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add dry ingredients to wet mixture, mixing until just combined.
  6. Scoop dough onto baking sheet and flatten slightly with the back of a spoon.
  7. Bake for 10–12 minutes, or until edges are golden brown. Allow cookies to cool completely.
  8. Soften strawberry ice cream slightly at room temperature.
  9. Scoop ice cream onto the flat side of one cookie and top with another to form a sandwich.
  10. Press gently and wrap each sandwich in parchment paper.
  11. Freeze for at least 2 hours or until firm before serving.
