Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 cups strawberry ice cream (store-bought or homemade)
- 1/4 cup fresh strawberries, finely chopped (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a separate bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add dry ingredients to wet mixture, mixing until just combined.
- Scoop dough onto baking sheet and flatten slightly with the back of a spoon.
- Bake for 10–12 minutes, or until edges are golden brown. Allow cookies to cool completely.
- Soften strawberry ice cream slightly at room temperature.
- Scoop ice cream onto the flat side of one cookie and top with another to form a sandwich.
- Press gently and wrap each sandwich in parchment paper.
- Freeze for at least 2 hours or until firm before serving.
Notes
- Use chocolate chip or sugar cookies for variation.
- Add a thin layer of strawberry jam for extra fruitiness.
