Ingredients
- 1 cup unsalted butter, softened
- 2 ½ cups granulated sugar
- 6 large eggs
- 8 oz cream cheese, softened
- 3 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 tsp vanilla extract
- ½ tsp almond extract
- 1 ½ cups fresh strawberries, diced or pureed
- ½ cup shredded coconut (optional)
- ½ cup chopped pecans or walnuts (optional)
- Powdered sugar (for dusting or glaze)
Instructions
- Preheat oven to 325°F (163°C). Grease and flour a bundt pan or two loaf pans.
- In a large mixing bowl, cream together butter, cream cheese, and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla and almond extracts.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture until fully incorporated.
- Gently fold in strawberries, and if using, coconut and chopped nuts.
- Pour batter into the prepared pan and smooth the top.
- Bake for 70–80 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
- Dust with powdered sugar or drizzle with glaze before serving.
Notes
- Toss strawberries in a little flour to prevent sinking.
- Can substitute other berries like raspberries or blueberries.
- Store in an airtight container at room temperature for 2 days or refrigerate for up to 5 days.
- Freezes well for up to 2 months—wrap slices individually.
- Optional: Add white chocolate chips or lemon zest for variation.
