Description

Strawberry Pie Bars are a delightful dessert with a buttery crust, sweet strawberry filling, and a crumbly topping. They combine the flavors of a classic strawberry pie in a convenient bar form, perfect for any occasion.

Ingredients

2 cups all-purpose flour

1 cup sugar

1/2 cup butter, melted

1 teaspoon vanilla extract

1/4 teaspoon salt

1 1/2 cups fresh strawberries, diced

1 tablespoon cornstarch

2 tablespoons lemon juice

1/4 teaspoon cinnamon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper.
  2. In a medium bowl, combine the flour, sugar, melted butter, vanilla extract, and salt. Stir until a dough forms.
  3. Press about two-thirds of the dough mixture into the bottom of the prepared pan to form a crust.
  4. In a separate bowl, toss the diced strawberries with cornstarch, lemon juice, and cinnamon (if using).
  5. Spread the strawberry mixture evenly over the crust in the pan.
  6. Crumble the remaining dough on top of the strawberry layer to create a crumbly topping.
  7. Bake for 35-40 minutes, or until the topping is golden brown and the strawberry filling is bubbling.
  8. Allow the bars to cool completely before slicing and serving.

Notes

  1. For a gluten-free version, use a gluten-free flour blend.
  2. To make these bars vegan, replace the butter with a plant-based alternative and use a flax egg or another egg substitute.
  3. Try adding chopped walnuts or pecans to the topping for extra texture.
  4. If using frozen strawberries, thaw and drain them before using.
  5. To store, keep them in an airtight container for up to 3 days at room temperature or up to 1 week in the refrigerator.
  6. For longer storage, freeze the bars for up to 3 months.
