Description
Soft and chewy strawberry cookies made with a cake mix and loaded with white chocolate chips. These cookies are quick to make, bursting with strawberry flavor, and perfect for Valentine’s Day or any sweet occasion.
Ingredients
- 1 box strawberry cake mix (15.25 oz)
- 1/3 cup vegetable oil
- 2 large eggs
- 1 cup white chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large bowl, combine the strawberry cake mix, vegetable oil, and eggs. Stir until a soft dough forms.
- Fold in the white chocolate chips until evenly distributed.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 9–11 minutes, or until the edges are set and the centers look slightly underbaked.
- Let the cookies cool on the pan for 2–3 minutes before transferring to a wire rack to cool completely.
Notes
- Do not overbake—cookies will continue to cook slightly on the pan.
- You can substitute semi-sweet chocolate chips if preferred.
- Cookies store well in an airtight container for several days.
