Description
Sweet and satisfying stuffed dates filled with creamy peanut butter and topped with rich chocolate. A quick no-bake treat perfect for snacking or dessert.
Ingredients
- 20 medjool dates
- ⅓ cup peanut butter (80g)
- ¼ cup coconut oil (50g)
- ¼ cup cacao or cocoa powder (15g)
- Sea salt flakes
- ½ cup dark chocolate or chocolate chips (70g)
Instructions
- Line a large baking tray with parchment paper.
- Slice open each date and remove the pit, then place on the tray.
- Spoon just under 1 teaspoon of peanut butter into each date.
- In a small bowl, melt the coconut oil in the microwave for about 30 seconds or using a double boiler. Stir in cacao or cocoa powder until smooth. Alternatively, melt pre-made chocolate in the microwave.
- Allow the chocolate to cool slightly, then drizzle over the dates or dip each date into the chocolate. Sprinkle with sea salt if desired.
- Refrigerate for about 20 minutes or until the chocolate has hardened.
Notes
- If your dates are large, you may need slightly more peanut butter.
- Store in the refrigerator for up to one week.
- You can substitute almond or cashew butter for peanut butter.
- For a smoother coating, dip the dates fully into melted chocolate instead of drizzling.
