Description

Sweet and satisfying stuffed dates filled with creamy peanut butter and topped with rich chocolate. A quick no-bake treat perfect for snacking or dessert.


Ingredients

  • 20 medjool dates
  • ⅓ cup peanut butter (80g)
  • ¼ cup coconut oil (50g)
  • ¼ cup cacao or cocoa powder (15g)
  • Sea salt flakes
  • ½ cup dark chocolate or chocolate chips (70g)

Instructions

  1. Line a large baking tray with parchment paper.
  2. Slice open each date and remove the pit, then place on the tray.
  3. Spoon just under 1 teaspoon of peanut butter into each date.
  4. In a small bowl, melt the coconut oil in the microwave for about 30 seconds or using a double boiler. Stir in cacao or cocoa powder until smooth. Alternatively, melt pre-made chocolate in the microwave.
  5. Allow the chocolate to cool slightly, then drizzle over the dates or dip each date into the chocolate. Sprinkle with sea salt if desired.
  6. Refrigerate for about 20 minutes or until the chocolate has hardened.

Notes

  • If your dates are large, you may need slightly more peanut butter.
  • Store in the refrigerator for up to one week.
  • You can substitute almond or cashew butter for peanut butter.
  • For a smoother coating, dip the dates fully into melted chocolate instead of drizzling.
