Description

Classic stuffed bell peppers filled with a savory mixture of ground beef, rice, tomatoes, and seasoning, then baked to perfection with melted cheese on top.


Ingredients

  • 6 bell peppers (any color)
  • 1 tablespoon oil
  • 1 small onion, diced
  • 2 teaspoons minced garlic
  • 1 lb ground beef
  • 2 cups cooked white rice
  • 1 (14.5 oz) can petite diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice off the tops of the bell peppers and remove the seeds and membranes. Set aside.
  3. Heat oil in a large skillet over medium heat. Add diced onion and cook until softened.
  4. Add minced garlic and cook for another 1-2 minutes.
  5. Add ground beef to the skillet and cook until browned. Drain excess grease.
  6. Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix well and let cook for 5 minutes.
  7. Stuff each bell pepper with the beef and rice mixture and place in a baking dish.
  8. Top each stuffed pepper with shredded mozzarella cheese.
  9. Cover the dish with foil and bake for 30 minutes.
  10. Remove foil and bake an additional 10 minutes or until cheese is melted and bubbly.
  11. Serve hot and enjoy!

Notes

  • You can use any color bell peppers based on preference.
  • Feel free to swap ground beef with ground turkey or chicken for a leaner option.
  • Pre-cooking the peppers for 5 minutes can make them softer if preferred.
