Description

Ingredients

  • 4 cups kale, chopped and stems removed
  • 2 ripe peaches, sliced
  • 1 cup fresh blueberries
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped pecans or walnuts
  • 1/4 small red onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Wash and chop the kale, removing any tough stems. Place it in a large bowl.
  2. In a small bowl, whisk together olive oil, honey, lemon juice, Dijon mustard, salt, and pepper to make the dressing.
  3. Pour the dressing over the kale and massage it gently for 2–3 minutes until the leaves soften.
  4. Add sliced peaches, blueberries, red onion, nuts, and feta cheese to the bowl.
  5. Toss everything together until evenly combined.
  6. Serve immediately or chill for 10–15 minutes before serving for enhanced flavor.
