Ingredients
- 4 cups sliced yellow squash
- 1/2 cup chopped onion
- 1 cup grated cheddar cheese
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup crushed buttery crackers
- 2 tablespoons butter, melted
Instructions
- Preheat your oven to 350°F (175°C) and grease a 2-quart baking dish.
- In a large skillet, cook the sliced squash and chopped onion over medium heat until tender, about 10 minutes. Drain any excess liquid.
- In a large bowl, mix the cooked squash and onions with cheddar cheese, sour cream, mayonnaise, salt, and black pepper.
- Transfer the mixture to the prepared baking dish. Sprinkle the crushed buttery crackers evenly over the top and drizzle with melted butter.
- Bake for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.
- Let cool slightly before serving.
