Description

This Summer Tortellini Skillet is a quick and colorful vegetarian dish featuring cheese tortellini, fresh zucchini, corn, cherry tomatoes, and basil, all cooked in one skillet for an easy, delicious weeknight meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium zucchini, halved lengthwise and sliced into half moons
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 2 cloves garlic, minced
  • 1 1/2 cups cherry tomatoes, halved
  • 1 cup fresh or frozen corn kernels
  • 1 (10-ounce) package refrigerated cheese tortellini
  • 1/4 cup water
  • 1 tablespoon unsalted butter
  • 1/4 cup grated Parmesan cheese, plus more for garnish
  • 1/4 cup chopped fresh basil, plus more for garnish
  • Red pepper flakes, optional

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the zucchini and season with salt and pepper. Cook until lightly browned and tender, about 4–5 minutes.
  2. Add the garlic and cook for 30 seconds until fragrant.
  3. Add the cherry tomatoes and corn, and cook for another 2–3 minutes until the tomatoes begin to soften.
  4. Add the tortellini and water. Stir to combine, then cover and cook for 5–7 minutes, stirring occasionally, until the tortellini is cooked through and the water is mostly absorbed.
  5. Stir in the butter, Parmesan cheese, and fresh basil. Cook for 1–2 minutes until everything is well combined and heated through.
  6. Season with additional salt, pepper, and red pepper flakes if using. Garnish with more Parmesan and basil before serving.

Notes

  • You can use frozen tortellini; just cook a few minutes longer as needed.
  • For added protein, top with grilled chicken or chickpeas.
  • Use yellow squash instead of zucchini for variety.
  • Great for using up summer vegetables from the garden or market.
