Description

These Summer Veggie Toasts are a vibrant, fresh, and healthy appetizer or light meal. Featuring toasted sourdough bread topped with creamy whipped goat cheese, marinated zucchini and yellow squash ribbons, juicy cherry tomatoes, and fresh herbs, these toasts are perfect for warm-weather dining.


Ingredients

  • 1 medium zucchini
  • 1 medium yellow squash
  • 1 teaspoon kosher salt, divided
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons extra virgin olive oil, divided
  • 4 ounces goat cheese, softened
  • 2 tablespoons heavy cream
  • 1 teaspoon chopped fresh thyme
  • 4 slices sourdough bread
  • 1/2 cup halved cherry tomatoes
  • Fresh basil leaves, for garnish
  • Freshly ground black pepper, to taste

Instructions

  1. Use a vegetable peeler to slice the zucchini and yellow squash into long, thin ribbons.
  2. Place the ribbons in a colander and toss with 1/2 teaspoon kosher salt. Let sit for 10 minutes to release moisture, then gently pat dry with paper towels.
  3. In a small bowl, whisk together the lemon juice, lemon zest, and 1 tablespoon olive oil. Add the squash ribbons and toss to coat. Set aside to marinate.
  4. In a separate bowl, whip together the goat cheese, heavy cream, thyme, and the remaining 1/2 teaspoon salt until light and fluffy.
  5. Brush both sides of the sourdough slices with the remaining tablespoon of olive oil. Toast the bread in a skillet over medium heat or under a broiler until golden brown and crisp.
  6. Spread the whipped goat cheese mixture over each toast slice.
  7. Top with marinated squash ribbons and halved cherry tomatoes.
  8. Garnish with fresh basil and season with freshly ground black pepper to taste. Serve immediately.

Notes

  • Use a mandoline for more uniform squash ribbons.
  • Substitute ricotta or cream cheese if goat cheese isn’t available.
  • These toasts are best served fresh and not ideal for storage.
