Ingredients
- 2 slices of bread (sourdough or your choice)
- 2 tbsp ricotta cheese
- 1/4 cup shredded mozzarella cheese
- 1 tbsp sun-dried tomatoes (chopped)
- 1/4 cup fresh spinach leaves
- 1 tbsp butter (for grilling)
Instructions
- Spread ricotta cheese on one slice of bread.
- Top with chopped sun-dried tomatoes and fresh spinach.
- Sprinkle shredded mozzarella cheese over the spinach.
- Place the second slice of bread on top to form a sandwich.
- Butter the outside of both slices of bread.
- Heat a skillet over medium heat and cook the sandwich for 2-3 minutes per side or until the bread is golden brown and the cheese is melted.
- Remove from heat, slice, and serve warm.
Notes
- Use oil-packed sun-dried tomatoes for more flavor.
- Swap in whole grain bread for added nutrition.
