Description

Ingredients

  • 1 1/2 pounds red beets (about 4 medium), trimmed and scrubbed
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon kosher salt
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 3/4 cup whole milk, plus more as needed
  • Freshly ground black pepper, to taste

Instructions

  1. Place the beets in a large saucepan and cover with water. Bring to a boil over high heat, then reduce the heat to maintain a simmer. Cover and cook until beets are fork-tender, about 45 to 60 minutes.
  2. Drain the beets and let them cool until you can handle them. Peel the beets (the skins should rub off easily) and cut them into bite-sized pieces.
  3. In a large skillet over medium heat, combine the sugar, salt, and butter. Stir until the butter melts.
  4. Sprinkle in the flour and stir constantly for about 1 minute to form a roux.
  5. Gradually whisk in the milk and bring the mixture to a simmer. Cook, stirring constantly, until thickened, about 2 to 3 minutes.
  6. Add the chopped beets to the sauce and stir to coat. Simmer for a few more minutes, adding more milk if needed to reach the desired consistency.
  7. Season with freshly ground black pepper to taste and serve warm.

  • You can use golden beets for a slightly different flavor and color.
  • Wear gloves while handling red beets to avoid staining your hands.
