Ingredients

  • 4 large eggs
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1/2 cup water
  • 2 cloves garlic, minced
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • 1 green onion, sliced

Instructions

  1. Heat oil in a skillet over medium heat and fry the eggs until the whites are set but yolks remain slightly runny. Remove and set aside.
  2. In the same pan, sauté garlic until fragrant.
  3. Add soy sauce, rice vinegar, sugar, and water. Stir and bring to a simmer.
  4. Return the fried eggs to the pan and spoon sauce over them. Cover and braise for 3–5 minutes.
  5. Stir in cornstarch slurry and cook until the sauce thickens.
  6. Garnish with green onions and serve warm over rice.

  • Adjust sugar and vinegar to balance sweetness and tanginess to taste.
  • Best served immediately with steamed white rice.
