Description

Ingredients

  • 1 lb ground chicken
  • 1 tbsp sesame oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1 red bell pepper, diced
  • 1 can (8 oz) water chestnuts, drained and chopped
  • 3 green onions, sliced
  • 1/4 cup hoisin sauce
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sriracha (optional for heat)
  • 1 head of butter lettuce or Bibb lettuce, separated into cups
  • Salt and pepper to taste
  • Optional toppings: chopped peanuts, cilantro, lime wedges

Instructions

  1. Heat sesame oil in a large skillet over medium heat.
  2. Add diced onion and sauté until translucent.
  3. Add garlic and ginger; cook for about 1 minute until fragrant.
  4. Add ground chicken, breaking it up with a spatula, and cook until browned and cooked through.
  5. Stir in diced bell pepper, water chestnuts, and green onions.
  6. Add hoisin sauce, soy sauce, rice vinegar, and sriracha. Stir to combine and let it simmer for 2-3 minutes.
  7. Season with salt and pepper to taste.
  8. Spoon the mixture into individual lettuce cups.
  9. Top with chopped peanuts, cilantro, or a squeeze of lime if desired.
  10. Serve immediately.
