Ingredients
- 1 lb ground chicken
- 1 tbsp sesame oil
- 1 small onion, diced
- 2 cloves garlic, minced

- 1 red bell pepper, diced
- 1 can (8 oz) water chestnuts, drained and chopped
- 3 green onions, sliced
- 1/4 cup hoisin sauce
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sriracha (optional for heat)
- 1 head of butter lettuce or Bibb lettuce, separated into cups
- Salt and pepper to taste
- Optional toppings: chopped peanuts, cilantro, lime wedges
Instructions
- Heat sesame oil in a large skillet over medium heat.
- Add diced onion and sauté until translucent.
- Add garlic and ginger; cook for about 1 minute until fragrant.
- Add ground chicken, breaking it up with a spatula, and cook until browned and cooked through.
- Stir in diced bell pepper, water chestnuts, and green onions.
- Add hoisin sauce, soy sauce, rice vinegar, and sriracha. Stir to combine and let it simmer for 2-3 minutes.
- Season with salt and pepper to taste.
- Spoon the mixture into individual lettuce cups.
- Top with chopped peanuts, cilantro, or a squeeze of lime if desired.
- Serve immediately.
