Description
These Sweet Chili Chicken Meatballs are tender, flavorful, and coated in a sticky, sweet, and mildly spicy sauce. Perfect as an appetizer, party snack, or served over rice for a main dish.
Ingredients
- 1 lb ground chicken
- 1/4 cup breadcrumbs
- 1 egg
- 2 green onions, thinly sliced
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp ground ginger
- 1 tbsp soy sauce
- 1 tbsp oil (for pan frying)
- 1/2 cup sweet chili sauce
- 1 tbsp soy sauce (for sauce)
- 1 tbsp rice vinegar
Instructions
- In a large bowl, mix together the ground chicken, breadcrumbs, egg, green onions, garlic, salt, pepper, ground ginger, and 1 tbsp soy sauce until well combined.
- Shape the mixture into small meatballs, about 1 to 1.5 inches in diameter.
- Heat 1 tbsp oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides and cooked through, about 10-12 minutes. Turn frequently to ensure even cooking.
- While the meatballs are cooking, in a small bowl, mix together the sweet chili sauce, 1 tbsp soy sauce, and rice vinegar.
- Once the meatballs are cooked, reduce the heat to low and pour the sauce over the meatballs in the skillet. Stir gently to coat evenly and simmer for 2-3 minutes until the sauce is slightly thickened and sticky.
- Serve warm as an appetizer or over rice as a main dish.
Notes
- You can use ground turkey as a substitute for ground chicken.
- For a spicier version, add some red pepper flakes or sriracha to the sauce.
- These meatballs can be made ahead and reheated easily.
