Description

These crispy chilli beef noodles combine crunchy strips of beef with a spicy, sticky sauce and stir-fried vegetables, all tossed with noodles for a satisfying and flavorful meal.


Ingredients

  • 400g (14 oz) rump steak, thinly sliced
  • 3 tbsp cornflour (cornstarch)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • Vegetable oil, for frying
  • 200g (7 oz) dried medium egg noodles
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 tsp minced ginger
  • 2 tbsp soy sauce
  • 3 tbsp sweet chilli sauce
  • 2 tbsp tomato ketchup
  • 2 tbsp brown sugar
  • 2 tbsp rice vinegar or white wine vinegar
  • 1 red chilli, thinly sliced (optional)
  • 2 spring onions, chopped (to garnish)

Instructions

  1. Cook the noodles according to the packet instructions, then drain and set aside.
  2. Place the sliced beef in a bowl and toss with cornflour, salt, and pepper until coated.
  3. Heat a generous amount of vegetable oil in a large frying pan or wok over high heat. Fry the beef in batches until crispy, then remove and drain on paper towels.
  4. Carefully pour out excess oil, leaving about 1 tbsp in the pan. Add the sliced onions and bell peppers and stir-fry for 3–4 minutes.
  5. Add the garlic, ginger, and red chilli (if using), and stir-fry for another minute.
  6. Mix the soy sauce, sweet chilli sauce, ketchup, brown sugar, and vinegar in a small bowl, then pour into the pan.
  7. Let the sauce bubble for a minute, then add the cooked noodles and crispy beef.
  8. Toss everything together until well coated and heated through.
  9. Garnish with spring onions and serve immediately.

  • Adjust chilli level to taste for a milder or spicier dish.
  • Best served immediately to retain the crisp texture of the beef.
